Sugar Mountain 2017 is thrilled to announce the return of our acclaimed immersive restaurant experiment, Sensory.

‘A feast for the senses … from start to finish’ – Gram Magazine

“We’ve reached peak food. Also peak music festival. But audio-art-food collaborations like Sensory are showing that we can still punch a hole through the known universe and discover something interesting, and delicious. High five, team Sugar.” – Gemima Cody, The Age Good Food Editor

Sensory explores the relationship between sight, sound, taste, smell and touch. It is a multi-dimensional, tactile experience, where different disciplines – food, sound, and visuals  – come together in a 60 minute, set menu narrative. Sensory takes place within a transformed indoor space at Victorian College of the Arts on the day of Sugar Mountain festival, with multiple sittings throughout the day.

In 2017, guests will be treated to an astonishing collaboration between three giants in their respective fields: S U R V I V E, Daniel Arsham and IDES’s Peter Gunn.

Sound:

This year, Sensory’s soundtrack is being exclusively created by transcendental masters S U R V I V E. The Texans – Adam Jones, Kyle Dixon, Mark Donica and Michael Stein – flipped ‘80s nostalgia on its head this year, when Dixon and Stein’s original music to Netflix hit ‘Stranger Things’ become a media sensation and a pop culture phenomenon. Formed in 2009, the band’s dark, sweeping ambience and pulsating instrumentals are one of a kind. With EPs and two full-length albums – including the recently released RR734, a nine-track epic inspired by IDM and horror scores – and performances at Moogfest, Levitation, Fun Fun Fun and gigs with Tame Impala, S U R V I V E will take Sensory to a whole new level with a fully original, hour-long score. Check out track ‘Copter’ here.

Sight:

New York-based, Miami-raised Daniel Arsham straddles the line between art, architecture and performance, his work shown in esteemed galleries such as PS1 in New York, The Museum of Contemporary Art in Miami, The Athens Biennale in Greece, and beyond. He joins Sensory as its visual collaborator, designing the restaurant’s physical environment. Arsham has collaborated with the likes of Hedi Slimane on Dior Homme retail spaces, legendary modern dance choreographer Merce Cunningham, plus Pharrell Williams, recreating Pharrell’s first keyboard in volcanic ash. The pair recently collaborated just this month with choreographer Jonah Bokaer for ‘Rules Of The Game’ – which premiered in New York City’s BAM Festival, described by Forbes as “Arsham’s latest multi-media triumph”.

Taste:

Chef Peter Gunn opened his acclaimed Smith St, Collingwood restaurant IDES in 2015, after flipping the script with his in-demand pop ups and former positions in iconic Melbourne kitchens such as Attica, Ezards, and The Royal Mail. Winner of the 2015 S. Pellegrino Young Chef of the Year Pacific semi-final, Peter revolutionised fine dining with his latest venture, menus described by Time Out as “fantastically original”. Sugar Mountain is thrilled to have Peter creating Sensory’s menu, which will be comprised of several courses. Says Peter:

“When I opened IDES I put as much thought into the music, the interiors and the lighting as I did the food because for me, all of those different aspects are vital in creating a great dining experience. I’m really looking forward to working with Daniel Arsham and the guys from S U R V I V E to take this idea to a whole new level at Sugar Mountain.”

With exclusive seatings on the day, tickets to Sensory are strictly limited and on sale 8am, Wednesday 16 November – $70, food and drinks inclusive – head here to book. You can buy a Sensory ticket separately (if you’ve already purchased a SM 2017 ticket), or bundle the two together. For now, you and any mates you’re planning to experience Sensory with can buy tickets individually or together – actual seating groups and times will be sorted in January.

And… there’s more!

Curated with the same vision as our music and visual artists, Sugar Mountain is pleased to unveil its mouth-watering 2017 eat and drink line-up – cutting-edge culinary experiences courtesy of Melbourne hometown giants. At SM 2017 festivalgoers can whet their appetites with:

EAT:

Kong BBQ

Richmond’s favourite Korean/Japanese pit BBQ house Kong is big on personality, bursting with diners licking their lips over delectable bao and roti rolls, kimchi, and many funky dishes. Says Broadsheet, Benjamin Cooper is the head chef “and he and his fellow chefs wear red baseball caps emblazoned with three-letter slogans; either ‘KIM’, ‘CHI’, or ‘BBQ’, and it’s these elements that make the place sing.” The younger sister to Chin Chin, experience Kong’s buzzy, fun atmosphere at SM 2017.

MIYAGI

It’s no surprise the term ‘best Japanese in Melbourne’ is often heard when describing Chapel Street’s Mr. Miyagi, a knockout Windsor star ever since it first popped up in 2013. Under the creative eye of Executive Chef Kyle Doody, this eatery has mouth-watering dishes: eccentric favourites such as the famous Miyagi Fried Chicken (MFC), the Nori Taco, nuggets of buttered corn. Get ready to hashtag #mrmsays with your mouth full!

8BIT

With its ‘80s-diner-meets-video-game-arcade feel, Footscray’s most popular burger shop 8bit is on a winning streak, recently opening a bustling sister shop in the CBD. Now it’s time for 8bit to join the party at SM17 – they’ll be on site delivering their signature, delicious burgers, hot dogs, fries, potato gems and shakes, all the brainchild of chefs Shayne McCallum and Alan Sam. With its cheerful charm and killer, must have menu, 8bit’s irrepressible spirit is a welcome addition to the festival team.

LAZER PIG

Collingwood’s best pizza parlour Lazer Pig will be on site, bringing their Peel Street, wood-fired goodness to VCA. The bar is famous for a committed palette of weekend DJs, but it’s their food that keeps us coming back. Lazer Pig’s Queen Margherita – with its in-house passata – is the stuff of legend, while you’d be hard–pressed to find a more knockout, crunchy sourdough crust, cooked over 72 hours. Owners Maurice Manno and Dan Zeidan know their stuff… food to salivate over.

PRETTY MAMA

If we say the words “40-hour process for jerk chicken” does that make your mouth water? Grill and island bar Pretty Mama is a CBD favourite for fans of rum-based drinks, Kokomo-themed soundtracks and smoky flavours. Owners Michael Cotter and Shae Silvestro delivering the Caribbean flavours, from crab remoulade to pork croquette. Wait for the dishes you’ll salivate over at Sugar Mountain and welcome Pretty Mama for their debut visit to the festival.

PIDAPIPO

Lygon Street gelato maestros Pidapipó, led by Lisa Valmorbida, have been churning out their traditional and modern gelato flavours since 2013, also famous for their homemade filled brioche, rooftop honey and ever-flowing Nutella fountain! Pidapipó has collaborated with Melbourne’s most talented creatives, including Banoffee, Client Liaison, chefs Pierre Roelofs, Tony Nicolini, Daniel Chirico of Baker D. Chirico, and fashion label P.A.M. We’re thrilled they’ll be collaborating with one SM 2017 artist to create an exclusive gelato flavour.

DRINKS:

THE TOP

Sitting at The Top of Dodd St, working with the best (Dave Kerr and his team at The Tender) to shake, stir and sling the finest cocktails and all things slurp-able. Creating drinks with the summer sun in mind, The Top Cocktail Bar will be the best spot to be merry and watch the Dodd St main stage. We will be meeting everyone at ‘The Top!

SAMPLE BREW

Returning to Sugar Mountain as our official beer partner of choice is Sample Brew –who’ll deliver their full-flavoured ‘3/4 IPA’ pale ale + other brews. In keeping with their commitment to continuously experiment with taste, quality and design, Sample have collaborated with renowned designers Dale Hardiman and Adam Lynch (of Melbourne design studio Dowel Jones) to create an entirely new festival installation, which will offer Sample’s full Fine Beer line-upon tap. Best of all, they’re creating a fresh batch of cans brewed exclusively for Sugar Mountain.

INDUSTRY BEANS

Making their very first appearance at SM 2017, Industry Beans have created the first specialty coffee bubble cup – a delicious single origin cold drip layered on con-soy (condensed and soy milks) and coffee soaked tapioca balls, just like bubble tea but with tasty coffee and made fresh -these bad boys will be featured along with all the espresso coffee you could possibly need at a festival.
